Our approach to sustainability is also rooted in heritage. We honour traditional cooking techniques that have stood the test of time—our biryanis are slow-cooked in clay handis using the classic dum method, allowing the aromas of rice, spices, and meat to blend naturally. Kebabs and breads are prepared in a coal-fired tandoor, bringing depth and smokiness to every bite while preserving the essence of North Indian culinary tradition. To complete the experience, our dishes are served in handcrafted pottery made by local artisans, celebrating craftsmanship while reducing reliance on disposable materials.
