Biryani Kebab & Chai (BKC) was founded in London in 2020, but its soul belongs to the historic kitchens of Awadh. In the royal courts of Lucknow, food was more than nourishment—it was an art form shaped by patience, precision, and hospitality. At BKC, we honour this legacy through slow-cooked biryanis, delicate galawat kebabs, and perfectly balanced chai—each dish crafted with care and respect for tradition.

Our journey began with a search for authenticity. The founders and culinary team travelled through the streets and bylanes of Lucknow, learning from local masters who have preserved the traditions of Awadhi cuisine for generations. They cooked alongside them, discovering the meaning of nafasat and nazaakat , while uncovering forgotten spice blends and heirloom recipes.

Along the way, they experienced the rhythm of dum pukht cooking, the etiquette of the dastarkhwan (royal dining spread), and the quiet discipline that defines Awadhi hospitality.

What began as curiosity soon became homage.

These learnings returned to London, where they were thoughtfully reinterpreted through modern techniques, mindful sourcing, and a philosophy that sustainability begins with respect—for ingredients, for people, and for tradition.

At BKC, biryani, kebab, and chai are more than signature dishes—they are symbols of comfort, community, and connection. Our spaces reflect the same balance that defines our cuisine: contemporary yet soulful, global yet deeply rooted.
